Tis the season to be... cooking! Christmas Christmas Info is just around the corner, but what about all those leftovers? Can't face another ham or turkey sandwich on Dec 26th? Well this challenge is for you! Using at least two Christmas leftovers, plus anything else you like, create something new! Here are some ideas to get you started:


  • Turkey
  • Roast Potatoes
  • Ham
  • Cranberry Sauce
  • Stuffing
  • Rum Balls
  • Pudding

    Leftover Shepards Pie:

    ingredients-
    left over turkey, white, dark or both
    left over mashed potatoes
    left over stuffing
    left over gravy
    salt and pepper to taste

    directions-
    place enough left over stuffing in glass baking dish to cover bottom about 1/2 to 3/4 inch deep. drizzle some left over gravy onto stuffing.
    place a layer of mashed potatoes on top of stuffing and gravy for another 1/2 to 3/4 inch layer. place turkey meat on top of mashed potatoes and cover top with gravy. season with salt and pepper to taste. for a little jazz I add a dust of cayenne pepper to the top.
    bake on 350 for approximately 25-30 minutes or until warm throughout.

    this is a very fast and easy way to use almost all the leftovers. the gravy on top of the stuffing keps it from drying out to much and the gravy on top gets a nice gummyness to it and sticks to the meat. you can also add additional warmed gravy to the serving.

    Left Over Standing Rib Roast (if you have any!!)

    ingredients-
    left over rib roast (whatever is left, this recipe is based off one bone remaning, about 1" think peice of meat)
    left over mashed potatoes
    2 cups beef broth or stock
    2 cloves garlic cut into about 1/4" think peices
    2 tablespoons horseradish (optional)
    salt and pepper to taste

    directions-
    place meat in glass baking dish side down (I used a dish just big enough to hold the meat)
    pour enough broth or stock to be about 3/4 deep to the meat, do not cover all the way
    add garlic to the broth
    season top of meat with salt and pepper to desired taste
    spread horseradish to top of meat
    cover with tinfoil and bake in 225 degree oven for 2 hours
    warm mashed potatoes and place recooked prime rib on top of potatoes, pour juice the meat cooked in on top for a terrific au jus

    optional-
    take mashed potatoes and make patties, dust patties in flour and make mashed potatoe pancakes by frying in a skillet with lots of butter until each side is browned nicely. use potatoe pancake under the meat for a nice crisp with the tender meat and insides of potatoe pancake.
